Whole30 Shrimp & Sausage SkilletĀ

Another one of our favorite Whole30 recipes is this simple and flavorful dish.  We like to prepare it with a higher ratio of vegetables that some other versions out there because it seems to give it a better texture and depth of flavor. This meal is easy to make and can be prepared in less than 15 minutes if you pre-cut your vegetables.

Prep Time - 15 minutes
Cook Time - 15 minutes
Servings - about 4
Ingredients
  • 1 lb. of shrimp (peeled and deveined) 
  • 6 oz. precooked smoked sausage 
  • 3/4 cup green pepper 
  • 3/4 cup red pepper
  • 1/2 medium yellow onion 
  • 1/4 cup chicken stock 
  • 2 zucchini 
  • 2-4 garlic cloves
  • 1 tsp salt 
  • 1 Tbs. pepper 
  • 1 tsp red pepper 
  • 2 tsp Old Bay seasoning 
  • Olive oil 
Instructions
  1. Heat a Tbs. of olive oil in a skillet over medium heat. 
  2. Season the shrimp with olive oil, old bay seasoning & salt and pepper (to taste).
  3. Cook the shrimp about 3-4 minutes on both sides - until opaque - once finished, take out and set aside. 
  4. Add about 2 more Tbs. of olive oil into the skillet (medium heat).  
  5. Sautee the onions and peppers until softened and golden. 
  6. Add the sausage. Cook for about 1-2 minutes turning constantly. 
  7. Add the Zucchini. Cook for about 1 minute ( until softened) 
  8. Add the Shrimp back to the skillet with the Garlic. Cook for about one minute. 
  9. Mix in the stock to the skillet until everything is moistened. 
  10. Add the salt, pepper, red pepper to taste. 
  11. Serve Hot!
