Skinny Summer Peach Crisp

I am just SO excited to share this months Wine and Dine recipe! 
Ever since that summer heat began creeping into North Carolina I have been on a peach kick! Since it is currently in season I have been loading up on as many peaches as possible. So yum! 

Just the other night I decided to combine my peach taste buds with my always present sweet tooth. I call this the Skinny Summer Peach Crisp because it is a guilt free alternative to those other super sweet desserts that you could be making.  

This sweet summer recipe is extremely simple and quick. It is a perfect, throw together and serve. Perfect for entertaining or for enjoying with the family after a fun-filled day!

Recipe: 

You will need to grease/butter at least a 9 x9 pan. I prefer to use a Cast Iron Skillet. 
Combine: 
~ 4-5 Peaches (Cut and Peeled)   
~ 1 1/2 - 2 Tablespoons of Sugar (you can substitute stevia for a more organic sweetener)
~ 1 1/2 teaspoon of Lemon 
~ 1 teaspoon of Cinnamon 
~ 1/4 teaspoon of Salt 

Cover the bottom of your pan with the combined mixture 

In the same bowl you used to combine the above ingredients combine:
~ 1/4 cup of brown sugar 
~ 1 tablespoon of white flour 
~ 1 tablespoon of wheat flour (NOT white/wheat flour) 
~ 1 1/2 teaspoon of Sugar 
~ 1 teaspoon of cinnamon 
~ 3 tablespoons of Butter (we use Amish butter) - You can choose to use less/more butter based on taste  - don't heat up - cut and dice the butter to mix into the batter
~ 3/4 cup of Old Fashioned Oats 

Combine (you may need to use your hands to mix crumble in the butter).  
Sprinkle the mixed crumble onto the peaches mixture. I use a spatula to press the crumble into the peaches. 
Bake for 25-30 minutes on 375 degrees F. 

This recipe serves 4-5 people. Best served with a dollop of Vanilla Ice-cream :)
